Spinach and Bacon with Egg Mayonnaise Stir-Fry

This easy stir-fry is seasoned with just mayo and salt and pepper! The rich flavor of mayo is irresistible, and it's perfect for bento boxes too!

  • Bacon (half bacon)1 pack (5 slices)

  • Mayonnaise1 tbsp plus

    Cut 1 bag of spinach into bite-sized pieces, and cut 1 pack of bacon into similarly sized pieces.

    Add 1 tbsp plus mayonnaise to a frying pan, heat it, and stir-fry the bacon.

    Once the bacon releases its fat, add all 1 bag of spinach at once and stir-fry over high heat while evaporating the moisture.

    When the spinach becomes tender, pour the 2 pre-beaten eggs around the pan.

    Sprinkle salt and pepper to taste over everything, mix together as the eggs begin to set, and finish to your preferred consistency.

Tips

When tasting, adjust the flavor by adding more mayonnaise or salt and pepper if needed. If you're concerned about spinach bitterness, blanch it beforehand for peace of mind. Stir-frying over high heat all at once will give you a firm, well-finished texture.
