Ingredients
2 servings- Beef (sliced or diced)150-200g
- Lotus root1/2 large node
- ★Soy sauce2 tbsp
- ★Sake2 tbsp
- ★Mirin2 tbsp
- ★Sugar1 tbsp
- ★Garlic (tubed)1.5 cm
- Sesame oil (for stir-frying)to taste
- Green onionoptional
- Sesame seedsoptional

Prepare 150-200g of beef (sliced or diced), cutting into 3cm pieces if needed.

Slice the lotus root into 2mm-thin slices and soak in vinegar water to remove any bitterness. Drain thoroughly.

Heat sesame oil in a frying pan and stir-fry the beef until the color changes, then remove from the pan.

In the same pan, stir-fry the lotus root until it becomes slightly translucent.

Return the beef to the pan, add the ★ seasonings (2 tbsp soy sauce, 2 tbsp sake, 2 tbsp mirin, 1 tbsp sugar, and 1.5 cm garlic), and stir-fry until everything is well coated.

Tips
Slicing the lotus root thinly creates a better texture balance with the meat. The sugar quantity can be adjusted to your preference. If you prefer a spicier version, add a small amount of chili pepper.
