Sweet and Savory Stir-Fried Bamboo Shoots with Bonito Flakes

This sweet and savory bamboo shoot stir-fry is packed with umami flavor — perfect for filling up those little gaps in your bento box! It goes so well with rice that you just can't stop eating♪

  • Bamboo shoots (takenoko), boiled170g
  • Bonito flakes (katsuobushi)3g
  • Vegetable oil1 tsp
  • ★Japanese sake2 tbsp
  • ★Sugar2 tbsp
  • ★Soy sauce2 tbsp

    Cut the boiled bamboo shoots (170g) into manageable lengths, halve them lengthwise, then slice thinly lengthwise again.

    Heat 1 tsp of vegetable oil in a frying pan and stir-fry the bamboo shoots.

    Add the ★ seasonings (2 tbsp sake, 2 tbsp sugar, 2 tbsp soy sauce) and stir-fry until the sauce coats everything evenly.

    Finally, add 3g of bonito flakes and toss quickly to finish.

Tips

Boiling the bamboo shoots with rice bran or a small amount of uncooked rice will bring out even more flavor. Using pre-boiled (packaged) bamboo shoots works great too.
