Japanese-Style Stir-Fried Carrots with Melting Cod Roe (Tarako Ninjin)

Crunchy carrots mixed with pops of savory cod roe - this easy side dish is so tasty, you'll want to eat it with rice every day!

  • Carrot1 large
  • Cod roe (tarako)1 large piece
  • ★Mirin1 tsp
  • ★Soy saucea pinch
  • ★Sesame oil2 tsp

    Cut 1 large carrot into thin julienne strips. Remove the membrane from 1 large piece of cod roe and break it apart with a fork.

    Heat 2 tsp of sesame oil in a small pan and add the julienned carrot. Stir-fry over medium heat.

    Add 1 tsp of mirin and continue stir-frying until fragrant and the carrot is coated.

    When the carrot reaches your desired tenderness, add the cod roe and gently toss to combine while stir-frying.

    When the cod roe begins to change color, sprinkle a pinch of soy sauce over everything and mix until the flavors are evenly distributed. Serve hot.

Tips

The dish will be delicious even if you simply cut and stir-fry the carrot without the extra steps.
