Refreshing Okra Salad with Pickled Plum

    Rub 10 okra with salt gently, then blanch until tender-crisp. Drain thoroughly.

    Cut the blanched okra into 4-5mm pieces.

    Remove the pit from 1-2 pickled plums and finely mince the flesh with a knife.

    Place okra, pickled plum flesh, and bonito flakes in a bowl. Add the ★ soy sauce and toss everything together well.

Tips

Adjust the amount of pickled plum and soy sauce to your taste. If using more pickled plum, reduce the soy sauce for better balance. Add extra bonito flakes to enhance the aroma.
