Addictive Chinese Cabbage Salad with Salt Kombu

Just chop the cabbage and toss it together - this simple dish is absolutely addictive! The combo of salt kombu and sesame oil is perfection! ♪

  • Chinese cabbage1/4
  • Salt1 tsp
  • ★Salt kombu (shio-kombu)a pinch
  • ★Red chili pepper (takanotsume), sliced into rings1
  • ★Roasted sesame seedsto taste
  • ★Sesame oil1 tbsp
  • ★Garlic pasteabout 2 mm

    Cut 1/4 of the Chinese cabbage into bite-sized pieces. Sprinkle with 1 tsp of salt, gently rub, let sit for a few minutes, then squeeze out excess moisture thoroughly.

    Combine all the ★ seasonings: a pinch of salt kombu, 1 sliced red chili pepper, roasted sesame seeds to taste, 1 tbsp sesame oil, and about 2 mm of garlic paste.

    Add the prepared seasoning mixture to the squeezed cabbage and toss well until evenly coated.

    Transfer the dressed cabbage to a serving dish and top with extra roasted sesame seeds if desired. Serve immediately.

Tips

This recipe works wonderfully with other vegetables like cabbage or daikon greens. Letting it sit for a while after preparing allows the flavors to meld for an even more delicious result. If you prefer less spice, you can omit the red chili pepper entirely.
