Spinach and Kiriboshi Daikon with Sesame (Aromatic Goma-ae)

Super easy in the microwave! This nutritious sesame-dressed spinach and dried radish is perfect over rice - you can even mix it in for onigiri or fried rice!

Ingredients

  • Spinach60g (about 2-3 bunches)
  • Carrotabout 4cm
  • Kiriboshi daikon (dried radish)about 10g
  • Thin fried tofu (usuraage)1/2 sheet
  • ★Dashi stock powder1 tsp
  • ★Soy sauce2 tsp
  • ★Mirin1 tsp
  • ★Sugar2/3 tsp
  • Roasted sesame seeds (irigo-ma)1 tbsp

    Wrap spinach in plastic wrap and microwave for about 1.5 minutes. Transfer to cold water, squeeze out excess water, and cut into bite-sized pieces.

    Rehydrate the kiriboshi daikon, drain well, and cut into bite-sized pieces. Julienne the carrot (about 4cm). Pour hot water over the thin fried tofu (1/2 sheet) until softened, then julienne it.

    Grind the roasted sesame seeds (1 tbsp) and set aside. In a microwave-safe container, combine all ingredients except spinach with the ★ seasonings and mix well.

    Microwave for about 1 minute. Once cooled slightly, add the ground sesame seeds (1 tbsp) and mix in the spinach (60g) until combined.

    Mix with rice for onigiri or fried rice. Add a pinch of salt or shiso leaves for enhanced flavor.

Tips

Adjust microwave heating time based on your microwave's power level. Feel free to increase the amount of ingredients to your preference.
