Chinese-Style Vegetable Stir-Fry with Ground Pork

The aroma of oyster sauce is absolutely irresistible in this Chinese stir-fry! The thick fried tofu makes it super filling and satisfying♪

  • Thick fried tofu (atsuage)1 large piece
  • Chinese chives (nira)1 bunch
  • ★Sesame oil1 tbsp
  • ★Salt and pepperto taste
  • ★Sake1 tbsp
  • ★Ginger (grated)1 clove
  • ★Oyster sauce2 tbsp
  • ★Soy sauce1 tsp
  • ★Sugar1 1/4 tsp
  • ★Chinese stock or Japanese dashi5g

    Cut the thick fried tofu into bite-sized cubes and cut the Chinese chives into 3cm pieces and set aside.

    Heat the frying pan, add 1 tbsp sesame oil and 1 clove grated ginger, and heat until fragrant.

    Season the 200g ground pork with salt and pepper to taste and stir-fry thoroughly. Once browned, add 1 tbsp sake and continue stir-frying.

    Add the thick fried tofu and stir together. Then add 2 tbsp oyster sauce, 1 tsp soy sauce, 1 1/4 tsp sugar, and 5g Chinese stock or Japanese dashi, stirring until all flavors are evenly combined.

    Add the Chinese chives, sprinkle with 3 pinches of salt, and stir-fry quickly, mixing everything together until well combined.

Tips

Brown the ground pork thoroughly until it has a nice color. This brings out the savory aroma and removes any unwanted odors, making the overall flavor more delicious.
