Fresh Spring Onion Refreshing Japanese Salad

  • Katsuobushi (bonito flakes)to taste
  • Green onion (scallion)to taste

  • Ichimi togarashi (ground chili pepper)to taste
  • ★Soy sauce1 tbsp

    Slice 2 small fresh spring onions as thinly as possible, then soak in water to mellow out the sharpness.

    Squeeze out the water firmly by hand, then add the ★ seasonings and toss well to combine.

    Top with katsuobushi, green onion, sesame seeds, nori, and ichimi togarashi to taste, and serve.

    If you prepare extra dressing, you can also toss in other vegetables like cabbage to make a heartier salad.

Tips

Squeezing out the moisture thoroughly helps the flavors absorb more deeply. Letting the salad sit for a few minutes after tossing will allow the flavors to meld together for an even better taste.
