Savory Nameko Mushroom and Tofu Soup

Just a quick simmer and this dish is done! Loaded with bonito flakes for a deep, rich umami flavor — it's warm, gentle, and totally comforting♪

  • Nameko mushrooms1 bag
  • Silken tofu1 block (approx. 300g)
  • Bonito flakes (katsuobushi)to taste (generously)
  • ★Mirin2 tbsp
  • ★Water2 tbsp
  • ★Soy saucea little over 1 tbsp

    Spread the nameko mushrooms (1 bag) in a colander, rinse lightly, drain well, and transfer to a pot.

    Add the ★ seasonings (2 tbsp mirin, 2 tbsp water, a little over 1 tbsp soy sauce) and a generous amount of bonito flakes. Heat over medium heat and bring to a boil.

    Cut the silken tofu (1 block, approx. 300g) into small cubes and add to the pot.

    Cook for about 3 minutes, stirring occasionally, until the tofu has absorbed the flavors. Serve immediately.

Tips

Using plenty of bonito flakes enhances the umami depth of the dish. If you like, scatter some green onions on top for an extra touch of flavor.
