Ingredients
2 servings- Thick fried tofu (atsuage)1
- Enoki mushrooms1/2 bunch
- Ginger2 cloves
- Vegetable oilto taste
- ★Water80 ml
- ★Dashi stock powder1 tsp
- ★Soy sauce1.5 tbsp
- ★Sake1 tbsp
- ★Mirin1 tbsp
- ★Sugar1 tsp
- ★Cornstarch2 tsp

Cut the thick fried tofu into bite-sized pieces. Trim the root end of the enoki mushrooms and break them in half.

Cut the ginger into thin julienne strips.

In a separate bowl, mix all the ★ seasonings together well.

Heat vegetable oil in a frying pan, add the thick fried tofu and enoki mushrooms, and stir-fry. When the enoki becomes tender, add the 2 cloves of ginger and stir-fry lightly.

Stir the sauce mixture once more and add it to the pan. Toss everything together over heat, stirring until the sauce thickens and coats everything. This is ready to serve.

It's convenient to mix the sauce ahead of time. The whole dish comes together in about 5 minutes from when you start cooking. Stir-fry the ginger for just 5-10 seconds until it's evenly mixed throughout.
