

This root vegetable salad has a wonderful sesame aroma! The slightly sweet dressing coats the vegetables perfectly and tastes so delicious! ♪
Ingredients
4 servings- Burdock root1 root (about 200g)
- Carrot1 root
- ★Sushi vinegar1 1/2 tbsp
- ★Mayonnaise3 tbsp
- ★Miso1 tsp
- ★Soy sauce1/2 tsp
- ★Ground white sesame2 tbsp
- Toasted white sesame seedsto taste

Slice the burdock root and carrot diagonally into thin slices, then cut into thin matchsticks.

Place burdock in a pot with enough water to cover it. Bring to a boil and simmer for about 1 minute. Add carrot and cook for another minute. Drain in a colander.

In a bowl, combine all the ★ seasonings and mix well to make the dressing.

Add the dressing to the cooled burdock and carrot, and toss well to coat.

Transfer to a serving dish and sprinkle with toasted sesame seeds to taste.

Finish by pinching the sesame seeds over the top.
Tips
If you prefer a finer texture for the burdock, you can use the sasagaki (shaving) method for easier eating.
