Stamina Boost! Daikon and Cucumber Umami Salad

This daikon and cucumber salad with garlic flavor is so addictive, you won't be able to stop eating! It's refreshing yet packed with stamina - seriously the best!

Ingredients

  • Daikon radish4 cm
  • Cucumber1
  • Salt1 tsp
  • Bonito flakes (katsuobushi)1-2 packets
  • ★Soy sauce2 tbsp
  • ★Sesame oil1 tbsp
  • ★Sugar1/2 tbsp
  • ★Garlic paste (tube)10 cm

    Peel the 4 cm daikon radish and cut it into 1 cm wide matchsticks. Cut the 1 cucumber into 4 cm pieces, then cut each piece into 4 equal parts.

    Place the daikon and cucumber in a bowl, sprinkle with 1 tsp salt, and mix well. Let sit for about 5 minutes, then squeeze out the released water and pat dry with paper towels.

    Mix together the ★ seasonings and toss well with the vegetables from step 2. Let sit for a few moments to allow the flavors to blend, then add 1-2 packets of bonito flakes and mix thoroughly. Transfer to a serving dish and enjoy!

Tips

Adding the bonito flakes at the end allows the dressing to coat the vegetables evenly and brings out the wonderful flavor.
