Slice 1 chicken breast into diagonal cuts (sogigiri). Season with a pinch of salt & pepper, 1 tsp sake, and 1 tsp rice vinegar, then let it marinate for at least 10 minutes.

Add 4 tbsp mayonnaise, 1 tbsp ketchup, 2 tbsp milk, 1 tsp honey, and 1 tsp lemon juice to a small saucepan. Warm over low heat until just heated through, then remove from heat to make the sauce.

Coat the marinated chicken in 3 tbsp all-purpose flour. Heat salad oil in a frying pan and cook the chicken on both sides until golden brown.
