Tender Chicken Wings and Eggs in a Savory Broth

    Place 4 eggs in a pot and cover with water. Bring to a boil over medium heat, then cook for 8–10 minutes. Transfer to cold water and gently peel the shells.

    Rinse the 8 chicken wings and pat dry thoroughly with paper towels.

    In a separate pot, combine ★1/2 cup vinegar, ★1/2 cup soy sauce, and ★1/2 cup sugar. Warm over medium heat, stirring well until the sugar dissolves completely.

    Once the sugar has dissolved, add the boiled eggs and chicken wings. Reduce heat to low, cover with a drop lid (otoshibuta), and simmer for 15–20 minutes, stirring occasionally with chopsticks.

    Remove from heat and transfer to a serving dish. The flavors will blend beautifully if you let it rest for a day – the taste improves even more!

Tips

For best results, boil the eggs slightly less than usual so they balance perfectly with the chicken wings. You can also use chicken drumettes, thighs, or any other chicken cuts – they all turn out delicious.
