  • Chicken wing sections (mid-joint wings)10
  • Sake1–2 tbsp
  • Potato starch (katakuriko)to taste
  • Sesame oilto taste (generous amount)
  • White sesame seedsto taste
  • ★Soy sauce2 tbsp
  • ★Sake2 tbsp
  • ★Mirin2 tbsp
  • ★Sugar2 tbsp
  • ★Garlic (tube)4–5 cm
  • ★Ginger (tube)4–5 cm

    Place 10 chicken wing sections into a zip-lock bag, add 1–2 tbsp of sake, and massage it into the chicken. Let it sit for a few minutes to remove any gamey odor.

    Transfer the chicken into a fresh zip-lock bag, add a generous amount of potato starch, and shake to coat evenly.

    Heat a generous amount of sesame oil in a frying pan, arrange the chicken pieces in the pan, cover with a lid, and pan-fry over medium heat, turning occasionally, until golden brown on all sides.

    Once the chicken is nicely browned, add the ★ seasonings and cook over low to medium heat, stirring occasionally, until the sauce thickens and coats the chicken.
