    Place 10 chicken drumettes in a vinyl bag, add 1-2 tbsp sake, rub it in thoroughly, and let sit for a while to remove any gaminess.

    Transfer the chicken to another vinyl bag, add potato starch to taste, and coat evenly.

    Heat a generous amount of sesame oil in a frying pan, arrange the chicken drumettes, cover, and pan-fry over medium heat, flipping occasionally until golden brown.

    Once the chicken is golden, add the ★ seasonings: 2 tbsp soy sauce, 2 tbsp sake, 2 tbsp mirin, 2 tbsp sugar, 4-5 cm garlic tube, and 4-5 cm ginger tube.

    Simmer over low to medium heat, stirring occasionally, until the glaze coats everything and reduces.

Tips
