Juicy Pork-Wrapped Asparagus with Teriyaki Mayo Ginger Glaze

This teriyaki mayo ginger sauce is absolutely delicious! Tender asparagus wrapped in juicy pork - you'll love it! ♪

  • Pork loin, thinly sliced8 slices
  • Asparagus6 spears
  • Salad oil1 tsp
  • ★Soy sauce1⅓ tbsp
  • ★Sugar1 tbsp
  • ★Mayonnaise2 tbsp
  • ★Mirin½ tbsp
  • ★Fresh ginger juice1 tbsp

    In a bowl, combine the ★ seasonings (soy sauce, sugar, mayonnaise, mirin, and ginger juice) to make the sauce.

    Trim the hard base of the asparagus by cutting 1-1.5 cm from the bottom, then use a peeler to scrape away the tough skin.

    Cut the asparagus into 4 equal pieces. Wrap in plastic wrap and microwave at 500W for 1 minute, then let cool.

    Lay out the pork loin slices and wrap 3 pieces of asparagus with each slice.

    Heat 1 tsp of salad oil in a frying pan and arrange the pork-wrapped asparagus with the seam side down.

    Once browned, flip and cook both sides thoroughly until the pork is cooked through.

    Add the sauce from step 1 to the pan, heat for 20-30 seconds to allow the flavors to blend, and serve.

Tips

When packing for a bento box, arrange pasta underneath to help the sauce soak in for even more delicious flavor.
