    In winter, warm 95ml of milk and 100ml of water in the microwave to lukewarm temperature (about 35-40°C), similar to bathwater. In summer, use cold water and milk straight from the refrigerator as is.

    Add all ingredients—280g bread flour, 3.6g dry yeast, 95ml milk, 100ml water, 12g shortening, 30g sugar, and 4g salt—to your home bakery machine and start the quick bake course with light browning setting.

    If room temperature is low, slightly warm the liquid before adding to promote fermentation. Conversely, in hot weather, use chilled ingredients to prevent over-fermentation.

    The normal bake course also works, but the quick bake course produces a moister, softer texture. Even without milk, the bread will be light and soft.

    The timer function can be used together with the quick bake course without any issues. While fresh bread is delicious, let it cool, place it in a plastic bag, and enjoy it the next morning for the best results.

    If you don't have shortening, you can substitute with butter or margarine.

    Replace the 30g sugar with 50g brown sugar for a richly flavored brown sugar bread.

Tips
