Fluffy and Sweet Microwave-Roasted Sweet Potato

You can make delicious roasted sweet potato in the microwave! The secret is soaking the paper towel - it keeps the potato sweet and moist. It's so easy!

    Wash the sweet potato thoroughly under running water, including the skin.

    Wrap the washed sweet potato in a kitchen paper towel that is completely soaked. Gently squeeze the towel so water drips slowly, but don't squeeze too much.

    Wrap the paper towel-wrapped sweet potato in a plastic bag and seal it tightly.

    Heat at 600W for 1 minute 30 seconds, then heat at 200W for about 10 minutes. For medium-sized sweet potatoes, aim for 8-10 minutes total; for larger ones, adjust to about 12 minutes.

    While still warm, remove the plastic bag and kitchen paper towel. Excess moisture will evaporate, and the water on the skin will dry off.

    For heating 2 or more sweet potatoes, microwave at 600W for 2 minutes 30 seconds, then continue at 200W for about 13 minutes.

    For baby food, strain through a fine sieve to make a paste, and add water as needed or heat slightly in the microwave if necessary.

Tips

The soaked kitchen paper towel keeps the sweet potato moist and prevents it from drying out. The key is to squeeze gently so water drips slowly without over-squeezing. Heating at 70°C for about 10 minutes brings out the natural sweetness of the sweet potato.
