Sweet Potato Steamed Cake with Pancake Mix

Super easy with pancake mix! The gentle sweetness of sweet potato is absolutely delicious. Fresh and fluffy straight from the steamer - you'll love it!

  • Sweet potato (medium)1

  • Pancake mix150g
  • Milk100ml

  • ★Vegetable oil2 tbsp

    Wash the medium sweet potato thoroughly and cut it into 1cm cubes without peeling. Place on a heat-resistant plate, cover loosely with plastic wrap, and microwave at 500W for about 5 minutes.

    In a bowl, crack and mix the 1 egg, then add 100ml milk and mix well. Add 150g pancake mix, the ★ seasonings (2 tbsp sugar and 2 tbsp vegetable oil), and mix everything together thoroughly. Reserve some sweet potato cubes for topping.

    Line a mold with baking cups and divide the batter evenly among them. Top with the reserved sweet potato cubes. If using sturdy cups, the mold is not necessary.

    Place in a steamer with steam rising, and steam over high heat for about 15 minutes. Insert a toothpick - if nothing sticks to it, they're done!

Tips

Wrap the steamer lid with a large cloth and tie it on top of the lid to prevent water droplets from dripping into the cakes.
