Ingredients
4 servings- Sweet potato (medium)1

- ★Salad oil2 tbsp

Wash 1 medium sweet potato thoroughly. Without peeling, cut it into 1cm cubes. Place in a microwave-safe dish, cover loosely with plastic wrap, and microwave at 500W for about 5 minutes.

Crack 1 egg into a bowl and beat lightly, then add 100cc of milk and mix well. Add 150g of pancake mix and the ★ seasonings, and stir everything together until combined. Set aside a few pieces of sweet potato for topping.

Line a muffin tin with paper cups and divide the batter evenly among them. Top with the reserved sweet potato pieces. If using sturdy cups, a tin is not necessary.

Place in a steamer with steam already rising, and steam over high heat for about 15 minutes. Insert a skewer into the center — if it comes out clean, they're done.
Tips
Wrap the steamer lid in a large kitchen cloth and tie it on top to prevent condensation from dripping onto the cakes.
