Fluffy Apple Cake Made with Pancake Mix

You can make this delicious apple cake by mixing everything in just one bowl! The aroma of cinnamon combined with the sweetness of apples is absolutely perfect!

    Line a heat-safe dish with parchment paper and preheat the oven to 180°C.

    Place a bowl on a scale, measure out 1 egg and milk (or soy milk) to reach 150g total, add 40g sugar, and mix well with a whisk.

    Add 40g vegetable oil and mix thoroughly until well combined.

    Add 200g pancake mix and 1/2 tsp cinnamon (optional), and mix until no lumps remain.

    Cut 2 small apples into 8 pieces each with a fan-like cut and add them to the bowl, folding everything together with a rubber spatula.

    Pour the batter into the prepared heat-safe dish and bake at 180°C for about 40 minutes until done.

    If using a loaf cake pan, it will bake in about 30 minutes. This makes it easier to slice and gives a nicer finish.

Tips

Measuring as you go will help prevent mistakes. Adjust the cinnamon to your taste. The apple size doesn't need to be exact.
