Line a heat-safe dish with parchment paper and preheat the oven to 180°C.

Place a bowl on a scale, measure out 1 egg and milk (or soy milk) to reach 150g total, add 40g sugar, and mix well with a whisk.

Add 40g vegetable oil and mix thoroughly until well combined.

Add 200g pancake mix and 1/2 tsp cinnamon (optional), and mix until no lumps remain.
