Creamy Cabbage Sandwich

    Wash 2 large cabbage leaves and pat dry thoroughly. Remove the hard core and finely shred the leafy parts.

    Place the shredded cabbage in a bowl and add 2 tbsp of mayonnaise. Mix until the cabbage is evenly coated.

    Let it sit for a few minutes so the cabbage softens and becomes easier to layer onto the bread.

    Prepare 2 slices of sandwich bread. If you prefer less bread, you can use 6-slice bread cut in half or sandwich-specific bread instead.

    Place 1 melting cheese slice on one slice of bread, then layer 1 bacon slice on top of the cheese.

    Toast both bread slices using the toaster function. Once toasted, spread 1 tsp of whole grain mustard on the other slice of bread.

    Layer the shredded cabbage mixture on top of the mustard, mounding it in the center to prevent it from falling out.

    Place the toasted bread with cheese and bacon on top of the cabbage layer. If the cabbage is overflowing, gently press it down.

    Place plastic wrap under the sandwich and wrap it tightly. Let it sit for a few minutes to help the ingredients settle.

    While wrapped, cut the sandwich in half with a sharp knife. Unwrap just before eating.
