Rich and Moist Cream Cheese Pound Cake

This is such a luxurious pound cake loaded with cream cheese and so moist! It's absolutely perfect with coffee! ♪

  • ◎Cream cheese100g
  • ◎Unsalted butter (or margarine)50g
  • Sugar80g
  • Eggs2
  • Lemon juice2 tsp
  • Sliced almonds (for garnish)optional
  • ★All-purpose flour120g

    Place 100g of ◎cream cheese and 50g of ◎unsalted butter (or margarine) in a bowl and mix with a hand mixer until smooth and creamy.

    Add 80g of sugar in 3 parts, mixing well after each addition.

    Add the 2 eggs in 4 parts, mixing for about 1 minute. Then add 2 tsp of lemon juice and mix well.

    Sift the ★ ingredients together, add all at once, and fold gently with a rubber spatula until just combined.

    Once the batter is smooth and glossy, pour into the prepared pan and decorate with sliced almonds (as desired).

    Bake in a preheated 180°C oven for 35 minutes. When a toothpick inserted comes out clean, the cake is done.

Tips

Butter the pan and lightly dust with flour, or line it with parchment paper to prevent the batter from sticking. Bring butter and eggs to room temperature beforehand for easier mixing. If the surface dries during baking, make a shallow lengthwise cut with a knife for even rising.
