

Super easy to make with pancake mix! The freshly baked cake has a crispy exterior and really lets the sweet banana flavor shine through!
Ingredients

Slice a few banana slices thinly from the 2 bananas and set aside. Place the remaining banana in a bowl and roughly mash with a fork.

In a separate bowl, combine the 200g pancake mix and 2 eggs. Heat 50g butter in the microwave until melted, then add the 30g sugar and 50ml milk. Mix everything together well.

Preheat the oven to 170°C.

Add the mashed banana to the batter and mix well with a spatula.

Line a pound cake pan with parchment paper, pour in the batter, and arrange the thinly sliced banana on top.

Bake at 170°C for 40 minutes.
Tips
Using half butter and half vegetable oil creates a better flavor balance and helps save on cost.
