Fluffy Potato Milk Soup

This creamy potato milk soup from Waiwai Combo is so comforting! The gentle, warming flavor is absolutely perfect♪

  • Milk2 cups
  • Consommé (granules)1 to 1.5 tsp

    Peel the potatoes and cut in half, then cut into 6 equal pieces. Immediately soak in water (extra, not in the measured amount) to remove the starch. Slice the onion thinly.

    Drain the potatoes and onion well, place in a pot, add just enough water to cover, and bring to a boil over high heat with the lid on.

    Once boiling, reduce to medium heat and cook until the potatoes are tender.

    Turn off the heat, remove the lid, and roughly mash about one large potato's worth using a spatula or similar tool. Keep some pieces whole to enjoy the texture.

    Add 2 cups of milk and warm over low to medium heat. Once warm, add 1 to 1.5 tsp of consommé granules and 5g of butter, stirring until dissolved. Season to taste with a pinch each of salt and pepper.

    Pour into bowls and top with chopped parsley to finish.

Tips

Avoid soy milk to preserve the flavor of the milk. Adding bacon adds depth to the flavor. You can also use pumpkin or turnips instead of potatoes for a delicious result.
