Directions
90 min- 1
Add 155–165g milk, 40g sugar, 20g condensed milk, and 30g margarine to a bowl. Heat at 500W for about 50 seconds until warmed to body temperature.
- 2
Add 3g salt and 4g dry yeast to the warmed mixture and mix well with a rubber spatula until the yeast is fully hydrated.
- 3
Add 250g bread flour and mix roughly with a rubber spatula until combined. Cover the bowl with plastic wrap, heat at 500W for 30 seconds, and let rest for about 10 minutes.
- 4
Divide the dough into 16 pieces, gently degass while shaping into rounds, and place in the pan. Cover with plastic wrap and heat at 500W for 30 seconds again.
- 5
Preheat the oven to 180°C and let the dough rise for about 10 minutes with a damp cloth on top. Be careful not to dry it out.
- 6
Once fermentation is complete, dust the ★ bread flour over the rolls using a tea strainer. You can also brush with milk as a finishing touch.
- 7
Preheat the oven to 180°C and bake for 15 minutes. After baking, drop the pan from about 10cm height to prevent shrinkage.
Tips
Don't overthink it—you can make this dough by feel. Having fun while baking is the best tip! Use less milk since margarine can make the dough sticky. Water absorption varies by flour, so make this a few times to get the hang of it.
