

This is the classic koya dofu simmering recipe my mom taught me! Gently simmered over low heat, it becomes so tender and comforting – you'll absolutely love it! ♪
Ingredients
4 servings- Freeze-dried tofu (koya dofu)4
- ★Sugar4 tbsp
- ★Soy sauce1½ tbsp
- ★Mirin1½ tbsp
- ★Salt½ tsp
- ★Water3 cups
- ★Dashi stock powder (hon-dashi)1 heaping tsp

Add all the ★ seasonings to a pot, mix well, then bring to a boil over medium heat.

Add the 4 pieces of freeze-dried tofu without pre-soaking, spread them slightly in the pot, cover with a lid, and simmer over low heat for about 15 minutes until tender.
