Thinly slice the chicken gizzards (1 pack, about 8 pieces) into 2–3mm slices. Blanch in boiling water, then drain in a colander and pat dry. If you're concerned about any gamey smell, add the green tops of a scallion and a few slices of ginger to the boiling water.
