Classic Kinako Cookies with a Rich Roasted Soybean Flour Aroma

These kinako cookies are so satisfyingly crunchy, you just can't stop munching! With their simple, wholesome flavor, they're the kind of treat that disappears before you know it♪

  • All-purpose flour (cake flour)45g
  • Kinako (roasted soybean flour)15g
  • Sugar2 tbsp
  • Vegetable oil1 tbsp

    Sift together the cake flour (45g) and kinako (15g), then mix well.

    Add the sifted flour mixture and sugar (2 tbsp) to a bowl and mix thoroughly.

    Add the vegetable oil (1 tbsp) and milk (2 tbsp), then knead by hand until the dough comes together smoothly.

    Wrap the dough in plastic wrap, shape it into a ball, and let it rest.

    Place the dough between two sheets of plastic wrap and roll it out to a thickness of about 3–5mm with a rolling pin.

    Use cookie cutters to cut out your desired shapes, then arrange them on a baking sheet lined with parchment paper.

    Preheat the oven to 170°C and bake the cookies for about 12–15 minutes. Keep an eye on them and adjust the baking time as needed.

Tips

Adjust the baking time depending on the size of your cookie cutters. You can also mix the ingredients in a zip-lock bag for easy cleanup. Feel free to adjust the amount of sugar to your taste. The listed quantities make a small batch, so try doubling the recipe if you'd like to make more.
