Restaurant-Style Mapo Pork at Home ★ Delicious Huihuo Rou

  • Leek (negi)1/3
  • Bell pepper1-2
  • Oil1 tbsp
  • Minced garlic (optional)1 cm from tube
  • ★Soy sauce1 tbsp
  • ★Sweet bean sauce (Tianmianjiang)1 tbsp
  • ★Sake1 tbsp
  • ★Sugar2 tsp
  • ★Doubanjiang (spicy bean paste)1-2 tsp
  • ★Water1-2 tbsp
  • ★Cornstarch3/4 tsp

    Mix all the ★ seasonings well together and prepare them in advance.

    Cut the 150g pork into bite-sized pieces. Roughly chop 1/6 cabbage and 1-2 bell peppers. Slice 1/3 leek diagonally into thin pieces.

    Heat a frying pan, add 1 tbsp oil, and stir-fry the 150g pork over high heat. Once the color changes, add the leek, cabbage, and bell pepper in order and stir-fry quickly. Add 1 cm of minced garlic from the tube if desired and stir together.

    Lower the heat, stir the mixed ★ seasonings once more, add to the pan, and stir-fry for 1-2 minutes until the sauce coats everything evenly. Done!

Tips

Using sweet bean sauce (tianmianjiang) creates an authentic restaurant-style flavor. Adding a small amount of cornstarch gives you the perfect silky texture. Always mix the seasonings well before adding them. If using watery cabbage like spring cabbage, reduce the water in the ★ seasonings or increase the cornstarch slightly.
