Colorful Soboro Don (Three-Color Rice Bowl)

  • Spinach (or snow peas)1 bunch

  • ★Sake (for meat)2 tbsp
  • ★Mirin (for meat)1 tbsp
  • ★Sugar (for meat)1 tbsp
  • ★Dashi (for spinach)1/2 tsp
  • ★Mirin (for spinach)1 tsp
  • ★Soy sauce (for spinach)1 tsp

  • ★Sugar (for eggs)1 tbsp

    Beat 2-3 eggs in a bowl and mix with 1 tbsp sugar, a pinch of salt, and 1 tbsp sake (for eggs). Pour into a heated frying pan and scramble with chopsticks until half-cooked. Remove from heat.

    Put 100g-150g ground pork in a pot and mix with 2 tbsp soy sauce, 2 tbsp sake, 1 tbsp mirin, and 1 tbsp sugar (for meat). Cook over high heat, stirring constantly until all liquid evaporates.

    Boil 1 bunch of spinach, drain well, and chop finely. Mix with 1/2 tsp dashi, 1 tsp mirin, 1 tsp soy sauce, a pinch of salt, and sesame seeds to taste (for spinach).

    Serve cooked rice in a bowl, then arrange the three prepared toppings (eggs, pork, and spinach) on top in a balanced way. Serve immediately.

Tips

The overall seasoning is on the rich side. If you prefer a milder flavor, adjust the amount of soy sauce to your taste.
