Ingredients
2 servings- Clams (asari)200g or more
- Sake1 tbsp
- Water400 cc
- Miso15g
- Green onion (chopped)to taste

Rinse the sand-cleaned clams (200g or more) under running water, rubbing the shells together to remove any slime from the surface.

Place the clams and 1 tbsp sake in a pot, cover with a lid, and heat over high heat while shaking the pot. Once the clams open, add 400 cc water.

Bring to a boil over medium heat and skim off any foam. Remove from heat and dissolve 15g miso into the soup.

Pour into bowls and garnish with green onion (chopped) to taste. Serve immediately.
Tips
To preserve the rich umami and depth from the sake steaming, use miso sparingly for better balance. Once the clams open, avoid overcooking to keep them tender and plump.
