Umami-Packed Mackerel Can Egg Stir-Fry

  • Egg1
  • Green onion (scallion)½ bunch
  • Sesame oil1 tbsp
  • ★Sugar2 tbsp
  • ★Mirin2 tbsp
  • ★Soy sauce2 tbsp

Directions

    Cut the green onion into bite-sized pieces.

    Heat 1 tbsp of sesame oil in a frying pan and add 1 can of mackerel in water.

    Break apart the mackerel while lightly stir-frying.

    Add the ★ seasonings and mix everything together.

    Crack 1 egg into the pan, gently mix while cooking over low heat until the egg is done.

    Once the egg is cooked through, add the ½ bunch of green onion and mix quickly. Transfer to a serving plate and enjoy!

Tips

Cooking over low heat allows the umami flavor of the mackerel to be fully absorbed. Watch carefully as the mixture can burn easily once the liquid reduces.
