- Potato starch4 tbsp
- Oil (salad oil or olive oil)2 tbsp

- ★Mirin2 tbsp

In a bowl, combine soy sauce 4 tsp, mirin 2 tbsp, sugar 4 tsp, rice vinegar 2 tsp, and mayonnaise to taste (the ★ seasonings for the sweet and sour sauce). Mix well and set aside.

Slice the 600g chicken breast diagonally into thin pieces about 1cm thick, then cut into bite-sized pieces.

Place the cut chicken breast in a bowl and add the ★ seasonings (sake 1 tbsp, sugar 1 tsp, salt 1/4 tsp, mayonnaise 1 tbsp). Massage thoroughly with your hands.

Add potato starch 4 tbsp to the marinated chicken and use chopsticks to coat evenly.

Heat a frying pan and add 1 tbsp oil. Arrange the chicken pieces in a single layer. Drizzle with the remaining 1 tbsp oil on top, cover with a lid, and cook over medium-low heat.

When the chicken starts to turn white, flip each piece with chopsticks. Cover again and continue cooking over medium-low heat.

Once the chicken is cooked through, remove the lid and wipe away any excess moisture or oil with a paper towel.

Increase the heat to medium. Stir the sweet and sour sauce from step 1 again, then add to the pan and coat the chicken evenly.
