Ingredients
3 servings- Ground chicken breast300g
- Onion1/2 small (about 80g)
- Egg white1
- Salt and peppera pinch
- Potato starch1 tbsp
- Soy sauce1 tsp
- Salad oila pinch
- ★Sake1 tbsp
- ★Mirin3 tbsp
- ★Sugar1 tsp
- ★Soy sauce1 tbsp and 1 tsp
- ★Potato starchslightly less than 1 tsp
Directions

Finely chop 1/2 small onion (about 80g).

In a bowl, combine 300g ground chicken breast, 80g minced onion, 1 egg white, a pinch of salt and pepper, 1 tbsp potato starch, and 1 tsp soy sauce. Mix well until sticky.

Divide the mixture into 12 portions and shape into oval patties, wetting your hands with water to prevent sticking.

Heat a pinch of salad oil in a frying pan over low heat, arrange the tsukune, and cook for about 2 minutes.

Once browned, flip and cover with a lid. Cook for 6 minutes over low heat.

While cooking, combine the ★ ingredients together (★potato starch will be added later).

Once the tsukune is cooked, add the combined ★ ingredients (except potato starch) and increase to medium heat. Simmer until the sauce reduces.

Flip the tsukune occasionally to coat with sauce. When the sauce becomes thick and bubbly, add slightly less than 1 tsp ★potato starch.

Shake the pan to coat everything well, and once the flavors are fully absorbed, it's ready to serve.
Tips
The tsukune mixture is quite soft, so wetting your hands with water while shaping prevents it from falling apart and makes the work smoother. You can also turn off the heat before arranging the tsukune in the pan.
