    Cut 1 cucumber into thin julienne strips. Sprinkle with a pinch of salt, gently massage, and squeeze out excess moisture.

    Slice 1/2 onion and soak in water, then drain well.

    Bring water to a boil in a pot, add a pinch of cooking sake, and poach 3 chicken breasts. Once cooked, cool slightly and shred into bite-sized pieces.

    Remove the pit from 2-3 pickled plums and pound with a knife until paste-like. Add the ★ seasonings and mix well.

Tips

Salt-massaging the cucumber removes excess moisture, allowing the sauce to penetrate better. Adjust the amount of pickled plum to your preference for better balance.
