Easy & Crispy Tempura Batter Magic

You can make super crispy tempura batter without store-bought tempura flour! Recreate that authentic restaurant taste right at home! ♪

  • Salt2 pinches
  • Water150 ml
  • Rice vinegar35 ml
  • Your choice of ingredientsvegetables, meat, fish, etc.

    Add 1 cup cake flour, 2 tbsp cornstarch, and 2 pinches of salt to a bowl and mix with a whisk.

    Mix 150 ml water and 35 ml rice vinegar together in a separate container.

    Pour the water and vinegar mixture into the bowl with the dry ingredients and mix gently. It's okay to leave the batter slightly lumpy.

    Lightly dust your chosen ingredients with cake flour, then dip into the batter from step 3.

    Heat the frying oil in a pot, add the battered ingredients, and fry over medium heat until done.

    For ingredients that cook quickly (like shishito peppers), reduce the vinegar to half the amount for an even lighter, crispier batter.

Tips

Don't overmix the batter or it won't be crispy. Stop mixing while the batter still looks slightly lumpy—that's the key to perfect tempura!
