Spinach and Bacon Quiche with Fluffy Custard

  • ★All-purpose flour110g

    In a bowl, combine the ★ ingredients: 110g all-purpose flour, 30-50 cc olive oil, 30-50 cc soy milk or milk, and 1/2 tsp salt. Mix well with a fork.

    The dough will be sticky, but continue mixing while working it with your hands until the powdery texture disappears, then flatten with a rolling pin.

    Roll the dough into a circle, place it in the pie dish, and use the rolling pin to press down and trim the excess edges. Refrigerate until ready to use.

    In a bowl, whisk together the ☆ ingredients: 2 eggs, 50 cc soy milk or milk, 100 cc heavy cream, and 70g mozzarella cheese until smooth and well combined.

    Lightly boil 1 bunch of spinach, squeeze out excess water, and cut 70g block bacon into bite-sized pieces.

    Heat olive oil to taste in a frying pan, add the spinach and bacon, season with a pinch of salt and pepper, and stir-fry.

    Preheat the oven to 220°C. Remove the pie dish from the refrigerator and spread the cooked filling evenly inside.

    Pour the egg mixture into the dish, optionally sprinkle with dried parsley, and bake for 20-30 minutes once the oven reaches the set temperature.

    For a firmer crust, you can blind bake the crust in a preheated 180°C oven for about 8 minutes before adding the filling.

    If blind baking, let the crust cool before adding the filling and egg mixture. Be careful not to overbake, as it can make the crust hard and difficult to cut.

Tips

If the quiche starts to brown too much while baking, cover it with aluminum foil to protect it. If you reduce the ★ olive oil to 30 cc, increase the milk to 50 cc. For the ☆ ingredients, adjust the heavy cream and milk so they total 150 cc for better balance.
