Juicy Pork Steak with Garlic and Sweet-Spicy Sauce

Thick-cut pork that's absolutely juicy and melts in your mouth! This is the authentic local favorite from Yokkaichi - the garlic aroma and sauce are just perfect! ♪

  • Pork steak (thick-cut recommended, block also works)2 pieces
  • Salt and black pepperto taste

  • Cabbage (shredded)generous amount
  • ★Worcestershire sauce (dark variety preferred)2 tbsp
  • ★Soy sauce1 tbsp
  • ★Mirin1 tbsp
  • ★Sugar1 tsp

    Peel the garlic cloves and cut them in half if large. You can lightly crush them to make it easier to remove the center.

    Gently pound the pork with a knife blade and season with salt and pepper to taste.

    Make shallow cuts into the pork and loosen the sinews to help the seasoning penetrate. Heat the frying pan, sauté the garlic first, then add the pork and begin cooking.

    Make several small cuts along the fat edges to prevent the meat from shrinking or curling while cooking.

    If the garlic aroma is too strong, wrap it in plastic wrap and heat in a 500W microwave for 30-40 seconds to mellow the flavor.

    Cook the pork until it's nicely browned, making sure the skin side is well-cooked.

    Add all the ★ seasonings and reduce until the sauce coats the pork. If there's too much liquid, remove the meat first and reduce the sauce.

    Arrange shredded cabbage on a plate and top with the pork and sauce. Serve with tomato or cucumber as a side if desired.
