    Place just under 1/2 of a medium ripe banana in a bowl and mash it with a fork until smooth.

    Add 2 tbsp all-purpose flour and 2-3 tbsp milk to the mashed banana, and mix gently to maintain a good texture.

    Heat a frying pan, lightly butter it, then pour in the batter 1 tbsp at a time and cook both sides until golden brown.

    Switching to whole wheat flour will make it healthier, and using soy milk will give it a lighter, fresher taste.

    Adding sweet potato or blueberries instead of banana will create a richer flavor.

Tips
