Fluffy Salmon and Mushroom Rice Cooker Rice (Takikomi Gohan)

Just toss everything in and let the rice cooker do the magic — so easy! The savory flavors of salmon and enoki mushrooms soak right into every grain of rice, and it's absolutely delicious♪

  • Fresh salmon2 fillets
  • Enoki mushrooms1 bunch
  • Rice3 cups
  • ★Sake2.5 tbsp
  • ★Soy sauce2 tbsp
  • ★Water (or dashi broth)to taste
  • ★Salt1/4-1/3 tsp

    Rinse the rice and drain in a colander. Cut the enoki mushrooms in half. Season the fresh salmon fillets with 1/4-1/3 tsp salt for flavoring.

    Add the 3 cups of rice to the rice cooker, then add the ★ seasonings (2.5 tbsp sake, 2 tbsp soy sauce). Pour ★water (or dashi broth) to taste according to the rice amount.

    Top with the enoki mushrooms and salmon fillets, then turn on the rice cooker.

    Once cooked, let it steam for about 5 minutes, then flake the salmon and mix well throughout.

    Serve in bowls and enjoy!

Tips

If using salted salmon, omit the added salt. You can use any mushroom variety you prefer. Mitsuba or green onions mixed in are delicious too.
