In a bowl, combine 500g ground beef and pork mix, 1/2 minced onion, 3 tbsp panko breadcrumbs, 3 tbsp sake, 2 pinches salt, a pinch black pepper, 1/2 tsp nutmeg, and 1 egg. Knead well with your hands until thoroughly mixed.

Once the mixture becomes pale and smooth, shape into golf ball-sized meatballs, pressing gently to remove air bubbles.
