Colorful Vegetable and Pork Gapao Rice

You can make this gapao-style rice without any special ingredients! It's sweet and savory, so kids love it and rice goes down so easily♪

  • Bell pepper2
  • Paprika (red and yellow)1 each

    Heat oil in a frying pan and crack eggs (one per serving) into it. Cook until the edges are crispy to make fried eggs. Set aside.

    In another frying pan, stir-fry 400g–600g ground pork over medium heat. Once the color changes, add 2 bell peppers, 1 red paprika, 1 yellow paprika, and 1 clove minced garlic. Continue stir-frying.

    Add all the ★ seasonings and stir-fry until the sauce coats the ingredients with just a little liquid remaining.

    Mound the cooked rice on a plate, top with the stir-fried pork and vegetables, and place a fried egg on top. Add vegetable garnish if desired and enjoy.

Tips

Adding paprika makes the dish colorful and appealing to children. You can also substitute other green vegetables or mushrooms for the bell pepper to improve the nutritional balance. Leftover portions can be frozen for convenient bento box meals.
