Juicy Aromatic Roast Chicken

This roast chicken is absolutely legendary! Marinate it the day before, then just pop it in the oven on the day - crispy skin and juicy inside, it's perfection!

Ingredients

  • Chicken drumsticks with thighs (bone-in)4
  • ★Ginger (thinly sliced)1 clove
  • ★Garlic (thinly sliced)2 cloves
  • ★Soy sauce5 tbsp
  • ★Sake3 tbsp
  • ★Honey2 tbsp
  • ★Mirin2 tbsp
  • ★Unrefined cane sugar1 tbsp
  • ★Black peppera pinch

    Using a fork, pierce the 4 chicken drumsticks with thighs in several places to help the marinade penetrate.

    Thinly slice the ginger and garlic. Mix together with 5 tbsp soy sauce, 3 tbsp sake, 2 tbsp honey, 2 tbsp mirin, 1 tbsp unrefined cane sugar, and a pinch of black pepper to make the marinade.

    Place the marinade and chicken in a sealable bag and marinate thoroughly. Preparing this the day before will allow the flavors to absorb more deeply.

    Preheat the oven to 200°C and arrange the chicken inside. Bake for 30-40 minutes. Brush the reserved marinade over the chicken halfway through for a more delicious surface. If it starts to brown too quickly, cover with aluminum foil.

    Remove from the oven and let rest briefly before plating.

Tips

If the chicken starts to brown too much while baking, cover it with aluminum foil to protect it. Marinating the day before also makes preparation on the day much easier.
