Ingredients
2 servings- Chinese chives (nira)1 bunch

- ★Honedashi (dashi seasoning)1/2-1 tsp
- ★Soy sauce (optional)1/2-1 tsp
- ★Black pepper (optional)a pinch

Beat the eggs with a pinch of salt. Heat a frying pan over high heat with plenty of oil, then pour in the egg mixture all at once. Once the edges start to cook, gently stir while tilting the pan. Remove while still half-cooked.

Cut the nira into 4cm pieces. In the same pan over medium-high heat, stir-fry for about 10 seconds, then season with 1/2-1 tsp honedashi.

Return the eggs to the pan and gently mix everything together.

Season to taste with 1/2-1 tsp soy sauce and a pinch of black pepper as desired, adjusting salt as needed.
Tips
Cooking the eggs over high heat gives the best texture. Use plenty of oil and be careful not to overcook. You can add mushrooms or pork for extra volume.
