Fluffy Aromatic Banana Bread

A simple banana bread you can whip up anytime! Fluffy and wonderfully fragrant, it stays moist and delicious even the next day! ♪

  • ★All-purpose flour70g
  • ★Bread flour50g
  • ★Baking powder1 tsp
  • ★Brown sugar (or white sugar)70-80g

    Oil the mold and microwave 70g of butter for about 20 seconds until soft. Preheat the oven to 170°C.

    Mix the softened butter with a whisk until creamy.

    Add 70-80g of ★brown sugar to the creamy butter and mix well.

    Gradually add 1 beaten egg to the butter mixture while stirring, then mix thoroughly.

    Sift in ★all-purpose flour (70g), ★bread flour (50g), and ★baking powder (1 tsp) and fold together gently with a rubber spatula until just combined. Stop mixing once there are no lumps of flour.

    Add 1-2 bananas, crushing them while incorporating, and mix to your preferred level of banana texture. Be careful not to overmix.

    Pour the batter into the prepared mold, make a slight indent in the center, and bake at 170°C for 30-40 minutes.

    Remove from the mold once baked and let cool. Once cool, wrap with plastic wrap to cool completely.

    Once completely cooled, wrap in plastic wrap or a plastic bag and store. It will stay moist and delicious even the next day.

Tips

Avoid overmixing the batter after adding the flour. You can also skip bringing butter and eggs to room temperature. Since the batter comes together quickly, it's recommended to preheat the oven at the start.
