Soft and Fragrant Banana Muffins

These moist banana muffins made with ripe bananas are amazing! The best part? No butter needed and they taste just like bakery-quality muffins!

    Preheat the oven to 180℃.

    Place 1⅔ bananas in a bowl and mash to your desired consistency with a whisk. Set aside the remaining ⅓ banana for topping.

    Add ★40-50g sugar, ★50ml rice oil, and 1 egg. Mix well until combined.

    Add 200g pancake mix and gently fold until there are no lumps remaining.

    Slice the reserved banana for topping into thin slices.

    Fill muffin cups to 4-5 ths full and top each with banana slices.

    Bake at 180℃ for 20-25 minutes.

    Insert a toothpick into the center—if it comes out clean, they're done. For extra moisture, wrap and let sit for several hours or overnight.

Tips

Avoid overmixing the batter for better rise and fluffier muffins.
