Ingredients
1 servings- Pasta80g
- Spinach1/2 bunch
- Ham (or bacon/sausage)2 slices (optional)
- Butter (margarine if needed)to taste
- Wheat flour1 tbsp
- Milk150ml
- Pasta cooking water1 ladle
- Consommé1/2 tbsp
- Coarsely ground black pepperto taste
Directions
20 min- 1
Bring a pot of water with plenty of salt (not included in measurements) to a boil and start cooking the pasta about 1 minute shorter than package directions.
- 2
Blanch the spinach, then cut it into 4-5cm pieces. Cut the ham (or bacon/sausage) into half circles and trim into 1cm-wide pieces.
- 3
Melt butter in a frying pan and sauté the spinach and ham.
- 4
Sprinkle 1 tbsp of wheat flour evenly over the mixture and stir over low heat until the flour is fully incorporated.
- 5
Gradually add 150ml of milk while stirring to avoid lumps. Add 1 ladle of pasta cooking water and 1/2 tbsp of consommé, then stir until the sauce thickens.
- 6
Add the cooked pasta to the cream sauce and mix well. Adjust the seasoning with salt if needed.
- 7
Transfer to a serving dish and finish by sprinkling with coarsely ground black pepper to taste.
Tips
We recommend using plenty of salt when boiling the pasta to ensure it's well-seasoned. The sauce becomes even richer if you add onions or mushrooms. If spinach isn't your favorite, blanching it beforehand will make it milder.
