Juicy Chicken Breast Chashu

This is a hall-of-fame recipe from nani cafe! The chicken breast gets so tender and absorbs all that delicious sauce - it's seriously addictive! ♪

  • Chicken breast (or thigh)2 pieces (about 500g)
  • ★Soy sauce100 ml
  • ★Mirin100 ml
  • ★Sake100 ml
  • ★Rice vinegar50 ml
  • ★Sugar3 tbsp
  • ★Ginger (or ginger tube)1 piece

    Remove the skin from the 2 chicken breasts (about 500g), keeping it on the outside, and tie them tightly with kitchen twine. Cut the twine a bit longer for easier handling.

    Place the 2 chicken breasts in a frying pan and flip them over occasionally until both sides are golden brown.

    Add all the ★ seasonings to the pan, add the 2 chicken breasts, and simmer over low heat for about 30 minutes, flipping occasionally.

    Let the cooked chicken cool, then place it in a storage container like a zip-lock bag and refrigerate for at least one night.

    Arrange on a plate and garnish with soft-boiled eggs, green onions, and seaweed if desired. It pairs wonderfully with vegetables.

    The flavor will deeply penetrate the chicken breast after resting overnight in the sauce. You can also arrange it like green onion chashu.

Tips

The amount of braising liquid is easy to adjust, so you can experiment with variations. It's also delicious served as a rice bowl topped with a poached egg.
